Peanut Butter Dipping Sauce
I took this from the Blue Apron Shrimp Summer Rolls recipe, and it goes great as a dip for veggies or (with a few tablespoons of water) drizzled over meat.
Ingredients
Creates about half of a cup of sauce.

| Peanut butter | 1/4 cup | 1/2 Cup |
| Soy sauce | 1 Tbsp | 2 Tbsp |
| Mirin or Rice Vinegar | 1 Tbsp | 2 Tbsp |
| Sriracha, Gochujang, or similar | 1 Tbsp | 2 Tbsp |
| (Optional) Water | 1 to 3 Tbsp as needed | 1 to 6 Tbsp as needed |
Instructions
Combine the ingredients in a bowl and whisk together with a fork or whisk. As written, the sauce is quite thick, and retains its shape when scooped with carrots or similar.
Mirin is naturally sweeter than Rice Vinegar, but may be more difficult to come by. Gochujang is naturally sweeter than Sriracha, so paring rice vinegar with Gochujang works great.
